Cackle & Oink BBQ on Texoma Parkway is the best barbecue in Sherman, an apple wood pit run by a working competition team since 2005. Crooked Letter and Magic Smoke are the other two independents inside the city limits. The deepest bench is ten minutes north in Denison, where Wheeler Barbecue and Hickory House both smoke daily.

Cackle & Oink BBQ

Texoma Parkway · $$

Known for Apple wood brisket and baby back ribs from a pit crew that still competes

Aaron Vogel, called Big A locally, opened this in a converted fast food building on 17 March 2005, and two decades later it is still the barbecue people in Sherman name first. The pit runs apple wood rather than the post oak most of Texas defaults to, which is why the smoke reads sweeter and lighter than a Lockhart brisket.

The competition side is checkable. KXII covered the crew at the Hogs for the Cause charity cookoff in New Orleans in April 2026, where Vogel was one of sixteen cooks in the pork categories and the team helped raise 35,000 dollars. KXII and KTEN both covered the 2023 taping of America's Best Restaurants here. A Texas state championship and a run of Best BBQ of Texoma wins appear on the restaurant's own site and nowhere independent, so treat those as the house telling its own story.

Go-to order or tip: Order across both halves of the menu. The baby backs and pulled pork are the Memphis side and they are what separates this place from a standard Texas pit.

Crooked Letter BBQ

Known for Texas smoke crossed with Hattiesburg, Mississippi soul food

Anthony and Vanessa Bouie run this trailer at Westwood Village, and the name is the Mississippi spelling chant, M-I-crooked letter-crooked letter-I. That is the whole pitch. The meat is smoked Texas style and the plate around it comes out of a Hattiesburg kitchen, which is a combination nobody else in Grayson County is attempting.

Two cautions. The published hours disagree across every platform, with some listing a short weekday lunch and others a Friday evening window, so call before you drive over. Some directory profiles also file the business under a Bells address on State Highway 56 rather than the Sunset Blvd trailer, and both appear on live ordering pages.

Go-to order or tip: They set up at the Sherman Farmers Market on second and fourth Saturdays through October, which is the easier way to catch them.

Magic Smoke

North Travis Street · $

Known for Drive-up window barbecue and loaded baked potatoes

This started as a mobile unit working events and now occupies a small drive-up building on North Travis with a window and two tables out front. It is listed in the Sherman Economic Development Corporation's business directory, which is the kind of record a pop-up does not usually have.

Worth knowing that Yelp files it under Southern rather than barbecue, and the loaded potatoes get as much attention in reviews as the brisket does. Treat it as a lunch stop rather than a sit-down barbecue meal.

Go-to order or tip: There is almost no seating. Order at the window and eat somewhere else, or call ahead for anything larger than a couple of plates.

Denison, ten miles north on US 75 · $$

Known for Central Texas brisket from a thirty year restaurant veteran

Not in Sherman, and worth the ten minute drive anyway. KXII and the Herald Democrat both covered the June 2025 opening. Owner Dante Ramirez spent about thirty years in Dallas-Fort Worth restaurants and, per KXII, previously owned a barbecue joint in Celina before moving north toward his wife's hometown of Sherman.

The 8 a.m. open is the practical detail. Nobody else in the county sells brisket that early, which makes this the one option if you want barbecue before a work shift or on the way to Lake Texoma.

Go-to order or tip: They also run pitmaster classes, so if you are shopping for a smoker rather than a plate, ask about the schedule.

Hickory House Bar-B-Que

Downtown Denison, one block off Main · $

Known for Hickory-fired enclosed pit brisket, family run since 1975

The Doyle family has owned and operated this since 1975, which makes it the oldest continuously running barbecue pit in Grayson County by a wide margin. The meat cooks in an enclosed pit on indirect heat from slow burning hickory, an older method than the offset smokers most new joints use, and it produces a softer bark and a deeper smoke ring.

It carries a Texas Monthly restaurant listing and a spot in the Denison tourism office's business directory. The building also houses Shawn's Soda Shop, so the dessert counter is not an afterthought.

Go-to order or tip: This is a lunch operation that closes mid-afternoon and earlier on Saturday. Do not plan a dinner around it.

Randy's Bar-B-Que

Denison, off Texoma Parkway · $

Known for Brisket sandwiches and stuffed peppers from a walk-up stand

A small to-go stand run by Randy Johnson, covered by Texoma Living, which traced the line at that corner back through the Lew's operation that preceded it. The stuffed peppers are the item people drive for and they are not on anybody else's menu in the county.

Hours are the catch. Sources give weekday windows that disagree by hours and some list a Saturday, others do not. What every account agrees on is that it opens midday and sells out.

Go-to order or tip: Go early in the lunch hour and call first. This is a stand, not a dining room, so plan to eat in the car or take it home.

Woodchucks BBQ

South Denison on Austin Avenue · $$

Known for Smoked turkey and brisketwurst

A backyard operation that went commercial, now carrying a listing in the Denison tourism directory. Turkey and brisketwurst are the reason to go, because both are hard to find done properly in this part of the state and neither is a throwaway line on the menu.

The public record here is thinner than everything above it on this list, roughly two dozen reviews across the major platforms, and the operating days are limited to about four a week starting Tuesday. Ranked accordingly.

Go-to order or tip: Check the current week before you go. The published schedule shifts more than a full-service restaurant's would.

RibCrib BBQ

North Highway 75 at the retail corridor · $$

Known for The only sit-down barbecue in Sherman open seven nights a week

A Tulsa-based chain founded in 1992 with more than fifty locations across eight states, which is exactly why it sits at the bottom of this list rather than off it. It is not going to beat the independents above on smoke, and we are not going to pretend otherwise.

What it has is availability. Every independent barbecue operation in Sherman closes by early evening or sells out first, and this is the only place in town where you can sit down with ribs at 8:30 on a Sunday night. Listings split between 3205 and 3207 N Hwy 75, so use the phone number if a map sends you wrong.

Go-to order or tip: Come here when the clock has already made the decision for you. Otherwise drive the extra ten minutes to Denison.

How did we pick these?

We started from every barbecue business the aggregators return for Sherman, then checked each one for two things: does it currently operate, and is it actually here. That cut the list fast. Beault's Backyard, which Texas Monthly wrote up in 2022, is listed as closed. Fine BBQ, at the same Texoma Parkway address, is also marked closed. O!NK shows a closed marker. Dickey's Barbecue Pit shows two Sherman addresses, one of them definitively shut, and the chain has closed roughly a hundred restaurants nationally since 2024, so we could not put it in front of a reader as a live recommendation.

What survives inside the Sherman city limits is three independents and one chain. That is not enough for a useful list, so we widened it ten miles up US 75 to Denison and labeled every entry with where it actually is. Four of the eight are in Denison. Ranking follows the smoke and the record, not the city line, except at the bottom, where RibCrib sits last on purpose. There are no partners, clients or sponsored entries on this list. No business in clients.json operates a barbecue pit anywhere in Grayson County, so nothing was pre-filled and nothing was cut for a relationship.

We also left off Texas Best Smokehouse on State Highway 91 in Denison. It is real, it is open 10 a.m. to 10 p.m. daily, and it is a barbecue counter inside a Pilot travel center. If you need brisket at nine at night and RibCrib is closed, that is your answer, but it is not a destination and we are not going to rank it as one. Lucky 2 BBQ, a Sherman barbecue wagon, is also off the list because we could not confirm a current location or schedule from any source newer than 2025.

What should you know before you go?

Almost all of this is a lunch business. Two of the eight are still serving at seven in the evening, and the two smallest, Randy's and Crooked Letter, run windows measured in hours rather than a full service. Published hours in Grayson County barbecue are unreliable enough that calling first is standard practice, not caution.

Parking is not an issue at any of these. Seating is. Magic Smoke has two outdoor tables, Randy's is a walk-up stand, and Crooked Letter is a trailer, so three of the eight assume you are taking the food with you.

Denison carries this list, and Sherman residents should treat that as useful information rather than a slight. Fifteen minutes on US 75 gets you a 1975 hickory pit, a thirty year restaurant veteran's brisket, and a stuffed pepper stand, which is a better afternoon than anything a single city of 45,000 can put up on its own. Pick by the clock. Before noon on a weekday, drive to Denison and get Wheeler or Hickory House. Midday in Sherman, go to Cackle & Oink and order both the ribs and the pulled pork. After dark, RibCrib is the only real option and there is no shame in it.
