The Best Barbecue in Denison, Texas

A researched, ranked guide to barbecue in Denison and north Grayson County, from a 1975 hickory pit downtown to the only joint in the county open at 8 a.m.

The Very Best of Texas Editors 3 min read How we rank →

The Short Answer

Wheeler Barbecue at 211 North Highway 75 is the best barbecue in Denison, and the only pit in Grayson County selling brisket at eight in the morning. Hickory House Bar-B-Que downtown has cooked on an enclosed hickory pit since 1975, and Randy's Bar-B-Que is the stand people drive to for stuffed peppers.

Wheeler Barbecue

North Highway 75, north of downtown · $$

Known for Central Texas brisket and smoked turkey, sold from eight in the morning

The strongest barbecue in Denison and the only one here that publishes its own hours, phone and menu. KXII and the Herald Democrat both covered the June 2025 opening. Owner Dante Ramirez spent roughly thirty years in Dallas-Fort Worth restaurants and, per KXII, ran a barbecue joint in Celina before moving north toward family in Sherman.

The eight in the morning open is the detail that matters. Nobody else in Grayson County sells brisket that early, which makes this the one option if you want barbecue before a shift or on the way out to Lake Texoma. Brisket and smoked turkey are what reviewers name first.

Go-to order or tip: It also runs pitmaster classes, listed on its own site. Ask about the schedule if you are shopping for a smoker rather than a plate.

Hours
Tuesday to Thursday 8 a.m. to 8 p.m., Friday and Saturday 8 a.m. to 9 p.m. Closed Sunday and Monday

Hickory House Bar-B-Que

Downtown, one block off Main · $

Known for Enclosed-pit hickory brisket, family run since 1975

The Doyle family has run this since 1975, which makes it the oldest continuously operating barbecue pit in Grayson County by a wide margin. The meat cooks in an enclosed pit on indirect heat from slow-burning hickory, an older method than the offset smokers every newer joint in the county uses, and it gives a softer bark and a deeper ring.

It carries a listing in the Denison tourism office's own directory and a Texas Monthly restaurant entry. The building also houses Shawn's Soda Shop, so the dessert counter is not an afterthought. Reviewers single out the baked beans and the slaw as often as the brisket.

Go-to order or tip: This is a lunch operation that shuts mid-afternoon and earlier on Saturday. Do not build a dinner around it.

Hours
Lunch only. Tuesday to Friday 11 a.m. to 4 p.m., Saturday 11 a.m. to 2 p.m. Closed Sunday and Monday

Randy's Bar-B-Que

Woodlawn Boulevard, off Texoma Parkway · $

Known for Stuffed peppers and brisket sandwiches from a walk-up stand

A small to-go stand run by Randy Johnson, covered by Texoma Living, which traced the line at that corner back through the Lew's operation that preceded it. The stuffed peppers are the item people drive across the county for, and nobody else in Grayson County puts them on a menu.

Hours are the catch and we will not pretend otherwise. Listings give weekday windows that disagree by hours, some show a Saturday and some do not, and the Tripadvisor page was captured reading closed. What every account agrees on is that it opens around the middle of the day and sells out.

Go-to order or tip: Go at the front of the lunch hour and phone ahead. This is a stand, not a dining room, so plan to eat in the car.

Hours
Midday weekdays until it sells out. Published windows disagree, so call first

Bear's Smokin' BBQ

Denison Food Truck Park, downtown off Chestnut · $

Known for A walk-up barbecue window at the downtown food truck park

A walk-up window inside the Denison Food Truck Park on Crawford Street, carried in the Texoma Connect travel directory and holding a 5.0 average across twenty independent ratings, which is the highest score anybody in Denison barbecue has on the board.

It is ranked here rather than higher because of the schedule, not the meat. The window runs for two or three hours on a handful of days, the published days differ between the two directories that list it, and the park itself keeps separate hours. Twenty ratings is also a thin record next to the joints above it.

Go-to order or tip: The food truck park posts the trucks on site for the day. Check it, or ring the number, before making the drive downtown.

Hours
A short walk-up window, roughly 11 a.m. to 2 p.m. on its operating days. Confirm the day before you go

Woodchucks BBQ

South Denison, Austin Avenue · $$

Known for Smoked turkey and brisketwurst

A backyard operation that went commercial and holds a listing in the Denison tourism directory. Turkey and brisketwurst are the reasons to go, because both are hard to find done properly in this part of the state and neither is a throwaway line on this menu.

Check before you drive. The public record is thin, around two dozen reviews across the platforms, the published schedule is a short weekday lunch, and the website it used to run no longer resolves. We found no closure notice and the tourism listing stands, but a phone call costs nothing.

Go-to order or tip: Ring (903) 814-8114 first. Of everything on this list, this is the one whose current status is hardest to confirm from a desk.

Hours
A short weekday lunch window, roughly Tuesday to Friday 11 a.m. to 3 p.m. Call before driving

Texas Best Smokehouse

Highway 91 at the travel center · $

Known for Brisket and a loaded brisket baked potato, served until ten at night

Honest framing first, because the search results will not give it to you. This is a barbecue counter inside the Pilot travel center on Highway 91, not an independent Denison pit, and it is one branch of a multi-state smokehouse chain. KXII reported at the 2021 groundbreaking that the Denison travel centre would be the chain's twelfth location, alongside a Fuzzy's Taco Shop and an Einstein Bros. It is listed under both Texas Best Smokehouse and Texas Best BBQ at the same address.

It earns the last spot on two grounds. It is the only barbecue in Denison serving at nine at night or on a Sunday, every other joint on this list being a daytime operation. And the loaded brisket baked potato is the item reviewers name, big enough that one calls it plenty for two.

Go-to order or tip: This is the Sunday and late-night answer, and nothing else in Denison is. Go in with travel-centre expectations and it delivers.

Hours
Roughly 10 a.m. to 10 p.m. daily, the longest barbecue hours in the county

How did we pick these?

No partners, clients or sponsored entries appear on this list. Nothing in clients.json operates in Grayson County, so the scaffold pre-filled nothing and nothing was cut for a relationship. Every pick is editorial.

Denison is a town of about 25,000, which means the whole barbecue field is countable. We counted it. A joint had to have an address inside Denison that agrees across at least two independent records, and it had to be serving now. Only one, Wheeler, publishes its own website, so the rest were pinned through the Discover Denison visitor directory run by the city's tourism office, the Texoma Connect travel guide, Texoma Living and current review listings.

Six entries survived, and two of them carry caveats we put in the entries rather than hide. Woodchucks still holds a tourism listing but its own website no longer resolves, so we tell you to phone first. Texas Best Smokehouse is a chain counter inside a travel centre on Highway 91, not an independent Denison pit, and it is labelled and ranked accordingly.

What we cut. Junie Bell's BBQ on South Armstrong Avenue has a Facebook page, three reviews, and hours we could not read on any source, which is not enough to send a reader to. Dunlap's 10K BBQ and Fish appears in one food-truck-park directory line with no address or hours at all. Cackle & Oink, which dominates the review counts in any Denison barbecue search, is a Sherman restaurant and belongs on the best barbecue in Sherman list, where we put it. Padding a Denison list with Sherman pits would have made the title a lie.

What should you know before you go?

Denison barbecue is a daytime business. Four of these six are lunch operations, two of them with windows under four hours, and one sells out rather than closing on a clock. If you turn up at seven in the evening, you have two choices in the whole city.

Joint When it serves Where Price
Wheeler Barbecue 8 a.m. to 8 or 9 p.m., Tue to Sat N Hwy 75 $$
Hickory House Lunch only, Tue to Sat Downtown $
Randy's Bar-B-Que Midday weekdays, until sold out Woodlawn Blvd $
Bear's Smokin' BBQ A short midday window Food truck park $
Woodchucks BBQ Weekday lunch, call first S Austin Ave $$
Texas Best Smokehouse 10 a.m. to 10 p.m. daily Hwy 91 $

The other thing to know is that the phone matters more here than it does in a bigger city. Three of the six publish no hours at all on a first-party source, and the aggregators disagree with each other by hours rather than minutes. Where that happened we described the pattern in the entry instead of inventing a precise opening time.

What happened to barbecue at 211 North Highway 75?

That address has a history worth knowing, because old listings will send you to it under the wrong name. The building housed a Freddy's, then Heritage Butchery & Barbecue, which Texas Monthly covered for its focus on local beef. Heritage closed in June 2024 according to Herald Democrat reporting, and its listings are now flagged closed across the directories.

Wheeler Barbecue opened in the vacated building in June 2025. There is no evidence of a sale or handoff between the two businesses, so read it as a new tenant in a good barbecue room rather than a continuation. If you search Heritage and land on Wheeler's door, that is why.

What should you do next?

If you have one meal in Denison, go to Wheeler Barbecue and go early. The eight in the morning open is genuinely unusual in Texas barbecue and the brisket holds up. If you want the older, stranger thing, Hickory House downtown has been cooking on the same enclosed hickory pit since 1975 and shuts in the middle of the afternoon, so make it a lunch plan.

If you are driving the region, the better barbecue decision may be ten miles south. Our best barbecue in Sherman guide covers a deeper bench, including the joint with the biggest review record in the county.

Frequently Asked Questions

Wheeler Barbecue at 211 North Highway 75 opens at eight in the morning Tuesday through Saturday, per its own site. No other pit in Denison or Sherman opens before eleven, so it is the only option for barbecue before a work shift or on the drive out to Lake Texoma.

Hickory House Bar-B-Que at 630 West Woodard Street, run by the Doyle family since 1975. It is the oldest continuously operating barbecue pit in Grayson County, and it still cooks on an enclosed pit over slow-burning hickory rather than an offset smoker.

Only at the Texas Best Smokehouse counter inside the travel centre on Highway 91, which runs roughly ten in the morning to ten at night every day. Wheeler, Hickory House and Randy's are all closed Sunday, and the food truck park window keeps a limited schedule.

No. Cackle & Oink is in Sherman, about ten miles south on US 75, and it carries far more reviews than any Denison pit. It is a short drive and worth it, but it does not belong on a Denison list, so we left it off and covered it on our Sherman page instead.

It closed in June 2024, per Herald Democrat coverage. The building at 211 North Highway 75 had previously housed a Freddy's, and Wheeler Barbecue moved into the vacated space, opening there in June 2025. Old Heritage listings still point at that address.
