The Short Answer

Helberg Barbecue is the best barbecue in the Waco area, ranked No. 8 on Texas Monthly's 2025 Top 50, though it sits in Woodway about eight miles from downtown. Inside the city, Terry Black's on South 8th cuts the biggest beef ribs and Papa Jack's on East Waco Drive is the local favorite, if you can catch its short week.

Helberg Barbecue

Phillip and Yvette Helberg lost their kitchen, their trailer and most of their building to a fire on the night of 26 November 2023. They raised about $80,000 from the community, cooked out of a food trailer parked off Texas Highway 6 while they rebuilt, and opened the new room in March 2025. Two months later Texas Monthly put them at No. 8 in the state, their second straight appearance on a list the magazine only publishes every four years.

The pork steak is the dish the magazine singled out, marinated overnight in citrus and spice. The pesto stuffed turkey and the banana pudding get named nearly as often. Read the address before you drive, because this is Woodway and not Waco proper, roughly eight miles southwest of the downtown square.

Go-to order or tip: Order the pork steak even if you came for brisket, and save room for banana pudding. Weekend afternoons are the busiest stretch of the week.

Terry Black's Barbecue

Known for Enormous beef ribs, cut to order down a cafeteria line

This is the fourth Terry Black's, opened 19 April 2024 in a purpose built downtown room with six smokers that were craned into place the previous October. Brothers Michael and Mark Black run the company, and their great grandfather Edgar Black Sr. opened Black's Barbecue in Lockhart in 1932, which is about as deep as Texas barbecue lineage goes.

You walk a tray down a counter and point. The beef rib is the signature and the reason people photograph the tray, but the brisket and the sausage are the consistent part. It is the most expensive barbecue on this list and the easiest to get into on a Saturday night, which are related facts.

Go-to order or tip: Beef ribs are finite and go early on football weekends. If you want one, do not make this your late dinner.

Papa Jack's BBQ

East Waco, in a strip center on East Waco Drive · $$

Known for Heaping trays of brisket, ribs and sausage from a two person kitchen

Kim and Gerald Hicks opened Papa Jack's in 2020, about two months before the pandemic shut dining rooms, and spent the next six or seven months working out of parking lots. In 2023 Yelp ranked it the No. 2 place to eat in the entire state of Texas, ahead of every restaurant in Austin, Houston and Dallas on that list.

The two of them are the only cooks, which Kim has said plainly is why the food does not wobble from one visit to the next. A world map on the wall is pinned with where customers came from, and it reaches a lot further than McLennan County.

Go-to order or tip: Go early in the day and go early in the week they are open. Thursday is the calmest of the three days.

Tony DeMaria's Bar-B-Que

East Waco, at Elm and Rose · $

Known for Brisket from a family that has sold barbecue in East Waco since the 1930s

The DiMaria family came from Poggioreale, Sicily, landed in New Orleans in 1888 and reached Waco in 1902. Tony was serving hot barbecue out of a brick pit behind his Elm Avenue grocery by 1936. Tony Jr. came home from the Second World War in 1946, opened his own market, and in the 1950s fed the crews building Interstate 35 through town.

The current building went up at Elm and Rose in 1995, a short walk from where the family started, and a fourth generation DeMaria runs it now. It is a counter, not a destination restaurant, and it is the cheapest good brisket in the city.

Go-to order or tip: Come before 1 p.m. This is the Waco joint most likely to be out of brisket by early afternoon.

Jasper's Bar-B-Q

East Waco, at Clifton Street and Elm Avenue · $

Known for The oldest barbecue joint in Waco, open in the same spot since 1919

Jasper DiMaria started with a pushcart fruit stand and opened this place in 1919. It has never moved, which makes it the longest running barbecue address in the city by a wide margin. Waco History, the public history project run out of Baylor, keeps a file on it for a reason.

The draw is not innovation. It is a plate of chopped beef, sausage and white bread served across a counter in a room where East Waco families have been eating for a century, often several generations at the same table. The four hour midday window is the whole day, so treat it as a lunch plan rather than a stop you fit in.

Go-to order or tip: The lunch window is short and the parking lot is small. Arrive by 12.30 p.m. or you are cutting it close.

Vitek's BBQ

Speight Avenue, just south of Baylor · $

Known for The Gut Pak, invented here in 1983

Vitek's dates to 1915 and the family is on its fourth generation. The Speight Avenue building went up in 1958 and has been a Baylor fixture ever since. The barbecue is solid rather than spectacular, and that is not why anyone drives here.

The Gut Pak is why. Bill Vitek built it in 1983 by putting chopped brisket on a Frito pie and adding sausage, beans, cheese, pickles, onions and sauce. It has been the best selling thing on the menu for four decades and it is the single most Waco item of food in the city.

Go-to order or tip: Order the small Gut Pak your first time. The full size beats most people, and you want room for brisket on its own.

Uncle Dan's BBQ & Ribhouse

Lake Air Drive, near Lake Air Mall · $$

Known for Pork ribs, smoked turkey breast and the Texas Tater

Dan Henderson started Uncle Dan's in 1978 on Wooded Acres Drive with two partners, bought them out in 1988 with his wife Clara, added the Hewitt store in 1990, then bought the old Kelly's Night Club building on Lake Air Drive in 1996 and moved into it in May 1998. Very little about the operation has changed since.

Ribs and smoked turkey breast are the strong suits, and the Texas Tater, a loaded baked potato built on the smoked meats, was invented here and copied all over Central Texas. There is a drive through, which no other joint on this list can say.

Go-to order or tip: Use the drive through at lunch. A Texas Tater with chopped brisket is a full meal for about the price of a sandwich.

Broken G BBQ

Known for The newest pit in the Waco area, from a self taught pitmaster

Anthony Walton cooked and catered around Waco for years before opening Broken G's first permanent restaurant on North Lacy Drive at the end of 2025. He is a Wacoan of 44 years, self taught, and the brick and mortar was a long time coming, funded partly by people who had been eating his food off a trailer.

It is the youngest operation here and it is ranked last for that reason rather than on the food. If you want to see where the Waco barbecue scene is going instead of where it has been, this is the stop.

Go-to order or tip: It sits in Lacy Lakeview, not Waco proper, about ten minutes north of downtown on Interstate 35. Check the day before you drive, because hours on a new pit move.

How did we pick these?

We started with the joints Waco people and Waco newsrooms actually name, then checked every one against something outside the review aggregators: Texas Monthly's 2025 Top 50, the Waco Tribune-Herald's survey of the local scene, KWTX and KXXV reporting, the Waco History files kept by Baylor, and the Visit Waco dining directory. Anything we could not confirm as currently open came off the list.

Two cuts are worth naming, because both still sit near the top of the auto generated "best BBQ in Waco" pages. In the Woods BBQ is not open. KXXV reported it closed after repeated break ins, and owner Nathon Woods has since been competing in a national entrepreneur contest to fund a comeback. Mama and Papa B's, a downtown fixture for four decades, shut its doors in 2025, and we could not confirm from any source that it is serving again. We would rather leave a Waco institution off than send you to a locked door, and we will add it back the day we can verify it.

Waco barbecue runs on short hours. Three of these eight close in the early afternoon or sell out before their posted time, and one operates a three day week. If you are planning a single trip around barbecue, build the day around the joint with the tightest window and fill in the rest.

Two practical notes. Football Saturdays at Baylor change everything within a mile of campus, so Vitek's and the downtown places fill early and stay full. And hours on the newer pits move, so a phone call the day before is worth more than any hours listing on the internet, ours included.

Which of these are actually inside Waco?

Six of the eight. Helberg is in Woodway and Broken G is in Lacy Lakeview, both suburbs with their own city limits, and we have labeled each one rather than quietly calling it Waco. Helberg still leads the list because it is the best barbecue anyone can reach from downtown in fifteen minutes, and pretending otherwise to protect a city boundary would not help you.

Push a little further and Central Texas gets serious. Miller's Smokehouse in Belton and Rossler's Blue Cord in Harker Heights joined Helberg on the 2025 Top 50, both an hour or less south on Interstate 35. If you are a completist, that is a very good Saturday.

What should you do next?

Do Helberg first, on a weekday if you can, and order the pork steak rather than defaulting to brisket. Then do one of the old East Waco counters, Tony DeMaria's or Jasper's, before 1 p.m. on a weekday, because those two rooms are the actual history of barbecue in this city and neither will wait for your schedule.

Frequently Asked Questions

No. Helberg is at 7809 N State Hwy 6 in Woodway, about eight miles southwest of downtown Waco, and the original location that burned in 2023 was out past there near Speegleville. Almost every Waco barbecue list includes it, which is fair, but the drive is real and worth knowing about before you go.

A Gut Pak is a Frito pie with chopped barbecued brisket on it, plus sausage, beans, cheese, pickles, peppers, onions and barbecue sauce. Bill Vitek built the first one at Vitek's on Speight Avenue in 1983. It is a Baylor tradition as much as a menu item, and the full size portion defeats most first timers.

Not as a restaurant. Guess Family made the Texas Monthly Top 50 in 2021, and in February 2025 it closed its brick and mortar at 2803 Franklin Ave while continuing to operate as a catering business. You will still see it on older Waco barbecue lists, so check before you drive there.

Tony DeMaria's and Jasper's both run short midday windows and stop when the meat is gone, so treat either as an early lunch. Papa Jack's operates a short week, generally Thursday through Saturday. Terry Black's and Uncle Dan's keep the longest and most predictable hours, and Terry Black's is the only one open late every night.

Three Central Texas joints made the 2025 list. Helberg in Woodway is the closest at No. 8, then Miller's Smokehouse in Belton and Rossler's Blue Cord in Harker Heights, both about 45 minutes to an hour south down Interstate 35. None of the three is inside the Waco city limits.
