How did we pick these?
We started with every barbecue name attached to Paris in the Lamar County Chamber directory, the Visit Paris Texas listings, the barbecue trade directories and the review sites, then cut anything we could not stand behind. That cut a lot.
Pit Happens BBQ, which still shows up near the top of search results for Paris barbecue, is permanently closed. Bigfoot Bob's Monster BBQ, which took over its Pine Mill Road spot in 2021, is now listed as closed too. Smoke Monkey turns up in Paris search results but the business is in Rockwall. Longhorn Barbque has an address on 19th Street NW and a phone number and nothing else we could verify, no site, no independent coverage, no confirmed hours, so we left it off rather than send you to a door that might be locked. MA and Pa's and Slaughter's appear in aggregator lists with no address attached at all.
That leaves six, and one of them is not in Paris. We say so on its card.
There are no partners, sponsors or paid placements on this list. Hello Web Designs has clients in Paris, and none of them are in the barbecue business, so this one is straightforward. Our Paris clients appear on the guides where they earned it, like the Paris restaurant guide, and they are labeled there.
The ranking leans on what could be independently confirmed. Scholl Bros is first because it is the only Paris pit a statewide publication has gone to the trouble of visiting and writing up. After that the order follows how much verifiable substance there is behind each operation, with the out-of-town meat market and the catering-only outfit at the bottom because they solve narrower problems.
What should you know before you go?
Hours are the whole game here. Four of these six are trailers or short-window operations, and a drive across Lamar County to a closed window is a wasted afternoon.

Sources disagree on Sunday at Scholl Bros. Texas Monthly recorded a short Sunday lunch when it visited, and current listings show Sunday closed. Treat Sunday as closed and be pleasantly surprised.
One more note on ribs. Harlem Nights Scratch Kitchen on Fitzhugh Avenue is a soul food restaurant rather than a barbecue joint, so it is not on this list, but its rib plate is the dish reviewers single it out for. If ribs are what you actually want and the trailers are closed, that is a real option in town.
Is there a reason to come to Paris for barbecue?
For a day trip on its own, not yet. Paris is not Lockhart, and nothing here is going to pull you off the road the way the pits we cover in Dallas will. What Paris has is one genuinely good pit that got better after a change in ownership, plus a handful of trailers doing specific things well.
Early December is the exception. The Texas BBQ Blowout brings a sanctioned state championship field to the Love Civic Center, with brisket, ribs, pork butt, chicken and turkey categories and scholarship money on the line. That weekend, Paris is a barbecue town.
What should you do next?
Go to Scholl Bros on a weekday, order the two meat plate with brisket and ribs, and judge the brisket on the pecan smoke rather than the bark. If it is a Wednesday or Thursday and you would rather eat ribs, drive to Gringos on South Church at lunch instead.
